Easy Pineapple Stuffing Recipe Moms Treasure Chest
This easy pineapple stuffing recipe is a great side dish for Brunch, Lunch or Dinner. It’s one of our family favorites, especially at holiday meals and special occasions.
With just five simple ingredients, this delicious pineapple stuffing casserole is quick and convenient to make, and makes a great addition to any buffet. This is one of those recipes that everyone asks for after they have tried it for the first time!
The name pineapple stuffing doesn’t really describe this pineapple casserole properly. I guess it first got the name pineapple STUFFING because the main ingredient is bread. This dish is so delicious, and fabulous, it’s almost like a dessert. I don’t really even like calling it a stuffing because the word stuffing just doesn’t do it justice.
When making this recipe, your best bet is to make and bake it in an oven-to-table type baking dish; if you have a Corning Ware dish with a lid, like the one shown below, that would be ideal. Click on the image to see the current price for this baking dish.

Easy pineapple stuffing recipe Ingredients:
- 1 stick Butter
- 1 cup Sugar, granulated
- 4 Eggs, large
- 5 slices Bread, cubed
- 1 large can Crushed Pineapple, drained
Pineapple Stuffing Recipe Instructions:
In a large bowl, cream butter and sugar with a mixer.
Add eggs one at a time blending well after each addition.
Cut the bread into 1/2 inch cubes. Add the bread and drained pineapple to the bowl.
Stir by hand until well blended.
Pour the mixture into a greased baking dish.
Bake at 350 degrees for approximately 40 minutes or until lightly browned on top.

- In the supermarket, pick a pineapple that is fresh looking, plump and firm, not dry and wrinkly.
- The leaves should be green, not brown.
- A larger pineapple will have more edible fruit, but is not necessarily riper that a small one.
- Myth: if the leaves are easy to pull out it is not a sign of a ripe pineapple.
- Store your pineapple in the refrigerator.
